Vadas Smokehouse & Bakery to open September 2018
Vadas Smokehouse & Bakery will open in September in the Jonkershuis building, following renovations. The last trading day for Hoghouse BBQ and Bakery is Sunday 20th May 2018.
ABOUT PJ VADAS:
PJ has worked in France, London and New York for the likes of Gordon Ramsay and Roger Verge. Back home, while working at The Roundhouse, the restaurant was twice listed in Eat Out’s Top 10 Restaurants. Having learnt the art of Texas-style barbeque on a visit to the US several years ago, he believes that cooking meat on fire is a culinary trait that almost all South Africans share, regardless of culture or background.
“The meat is smoked low and slow – at a low temperature for a long period of time – and this method allows us to use the lesser known cuts of meat like beef brisket, pork neck and lamb shoulder,” he says.
WHAT TO EXPECT ON THE MENU:
PJ is committed to serving only sustainable, ethically sourced meat and seafood and as much local, organic produce as possible. He loves working with passionate farmers and producers – including Spier’s very own Farmer Angus, who will supply the new restaurant with pasture-reared beef, pork and lamb.
“We will buy in whole carcases – knowing exactly what the animal ate and where it comes from – and use as much of the animal as possible,” PJ explains. Expect to see the likes of ox heart pastrami, chicken gizzards and lamb chops making an appearance on the daily specials board.
Vadas Smokehouse & Bakery will be a self-service eatery: guests will order from the bar, and the food will be brought to the table soon after.
The bakery will offer bread, simple and delicious pastries and mouth-watering pasteis de nata. A new parking area parallel to the R310 will allow easy access for people collecting orders. The current retail area will be transformed into a lounge where businesspeople will be able to conduct meetings in a relaxed setting.
IN THE INTERIM:
In the period between Hoghouse’s closure and the opening of Vadas Smokehouse & Bakery, Spier’s alternative dining options are:
• Eight: The produce used at Eight, Spier’s farm-to-table eating experience, is either grown on the farm or sourced from nearby farmers. Natural and organic ingredients are preferred and combined to create nourishing, healthy, and delicious food.
• Spier Farm Kitchen: Delicious ready-made food including rotisserie chicken, fresh salads and handcrafted pies as well as seasonal picnic baskets (available for pre-order online at www.spierpicnics.co.za)
• Spier Hotel: Enjoy a glass of wine or a cocktail on the terrace with bar snacks, or breakfast, lunch or dinner at the Spier Hotel restaurant.
