Also known as The Diva of Delicious, Lorianne is the chef behind the menus in Spier Hotel's restaurant and wine bar. Lolli started her training in Franschhoek where she discovered her passion for cooking. She then travelled to London to learn the basics of a kitchen. On returning to South Africa, she studied and then joined Edgar Osjinik at Buitenverwachting, followed by a stint at Cellars Hohenort with David Godin. Lolli then joined Bruce Robertson and his team at the Showroom, before exploring the wild at Singita. She really missed the Mother City and was looking for more of a challenge – which is how she ended up at Spier. In 2011, Lolli travelled to California to Chez Panisse, which has been a huge inspiration. Chez Panisse focuses on the best possible produce, grown in the most sustainable way. “Every ingredient was treated with the utmost respect and kept true to its own flavour – the way Mother Nature intended,” she says.
