Intense ruby colour. The wine shows inviting aromas of cherry, well-matured oak spice and hints of tobacco. The palate is beautifully structured and creamy in texture. Will gain additional complexity with cellaring.
Grapes from selected vineyard blocks are harvested and pre-cooled in 8 - 10 lug boxes, Bunch sorted, destemmed and berry sorted to take out green, pink and raisin berries. The wine is fermented in a combination of open-top oak fermenters (1 ton) and stainless steel tanks for 10 days at 24 - 26 ºC. Malolactic fermentation and maturation took place in a combination of 30litre French and American oak barrels for 18 months.
Ideal with mature beef or venison and strong flavoured cheeses.

Deep ruby colouring hints at a rich and complex wine .Ripe cherry and subtle oak- derived spice show with roasted vanilla , banana , toffee and caramel on a tantalizing nose .
Grapes from selected vineyard blocks were hand harvested at optimum ripeness, meticulously sorted, gently crushed and cooled to 10-20ºC. Three days of cold soaking preceded temperature controlled fermentation; 15% of which occurred in open top oak fomenters. The wine matures in a combination of French and American oak; with individual barrels selected for blending.
Serve with black peppered ostrich fillet, caramelized baby beetroot and mascarpone cheese topped with sunflower seed croutons.
