Opulent, pomegranate red with youthful bright rim. Beautiful pomegranate flavours with hints of strawberries and caramel. Wonderful balance of berry fruit and subtle smooth tannins. Rich and complex wine with a long clean finish.
The grapes were handpicked and sorted by hand to remove any pink, unripe berries. Cold soaking and fermentation occurred in open Oak vats and the punch down technique was followed to extract flavour, colour and body. MLF and maturation occurred in 400 liter barrels to allow for slow oak integration and maximum fruit preservation. Matured for 16 months in 40% new French oak, the balance is 2nd fill French oak. Barrel selection proved to be the ultimate decider to make this wonderful sample of cool climate Pinot Noir from Elgin Valley.
