21 Gables Sauvignon Blanc 2015

The Spier 21 Gables Sauvignon Blanc is typically a crisp and refreshing white wine with notable acidity. It offers a wide spectrum of flavours: from the herbaceous and grassy, through to mineral tones and hints of citrus and tropical fruit.

SOIL

Soils: Rich Oakleaf and Swartland Proximity to ocean 16 km.

Tasting Notes

Fresh grassiness with bell pepper, jalapeno, green fig leaves and gooseberry. Concentrated and richly textured, palate with fresh green finish.

Vinification

Grapes were hand-harvested early in the morning in 10kg lug boxes and pre-cooled before hand sorting, destemming and crushing. Skin contact was limited to 6 hours and the free run juice drained off to settle overnight before inoculation with a selected yeast strain. The fermentation took place under controlled temperatures between 12 – 14 °C. The wine matured for 6 months on the lees before bottling

White meats like lobster, pork belly and chicken with spring-summer vegetables like artichoke hearts and asparagus
