Early Bird 2015

A red blend of Shiraz, Cinsaut, Carignan and Grenache.

SOIL

The vines grow in decomposed granite soils in Paardeberg, Darling and Wellington.

TASTING NOTES

Red currants, cranberry and rose petals form the initial impressions of this nuanced and velvety smooth wine. Medium-bodied wine, with a smooth finish.

VINIFICATION

All the grapes were picked by hand, before de-stemming into red stainless steel fermenters. Cold-soaking lasted 3 days before yeast inoculation. Primary fermentation occurred in stainless steel tanks and lasted up to 8 days. The wine was racked in to steel tanks for the malolactic fermentation to take place. Maturation took place in older, neutral barrels for 12 months.

SERVING SUGGESTION

Savoury snack platters with hard cheeses, charcuterie and cold cuts, and Mediterranean olives.
