A bordeaux-style white blend of Sauvignon Blanc and Semillon.


Clovelly, Oakleaf and Swartland


White peaches, green asparagus and grapefruit flavours on the nose with green grassy undertones and a hint of vanilla. The palate sings with green tropical and gooseberry flavors.


Grapes were hand-harvested early in the morning in 10kg lug boxes and pre-cooled before hand sorting, destemming and crushing. Skin contact was limited to 6 hours. The free run juice drained off to settle overnight before inoculated with specifically selected yeast strains. The fermentation took place under controlled temperatures between 12 - 14 °C. The wine matured for 6 months on the lees before bottling. 10% of the wine was matured in second fill French oak for 10 months.


Butter roasted free-range chicken with seasoned goat cheese under the skin or battered SASSI-friendly fish nuggets with anchovy mayonnaise.
