A bordeaux-style red blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot.

SOIL

Decomposed granite with clay subsoil in Stellenbosch and Darling 7 – 20 km from the cold Atlantic Ocean.

TASTING NOTES

Beautiful blackberry and currant supported by cedar, dark chocolate and subtle fennel flows into a vibrant palate with great balance and dense tannins. Ageing will make this wine even more delicious.

VINIFICATION

Grapes were hand-harvested, pre-cooled, de-stemmed and individually sorted to remove unwanted berries. Fermentation took place in stainless steel tanks and open oak barrels for up to 30 days. Malolactic fermentation and maturation took place in 100%, 300L French oak barrels for 24 months; 60% of these were first fill and the balance was second fill. Each varietal was crafted individually to address their unique needs so that they could fully reach their potential. Selective tasting from the barrels determined the composition of the blend. The blending sought to attain harmony between the five varietals, striking the ultimate balance between fruit, palate volume, oak extract and tannin, without sacrificing the expression of each varietal.

SERVING SUGGESTION

Slow-cooked oxtail, beef casserole or fire-roasted wild mushrooms and organically grown aubergine risotto with truffle oil.
