Pinotage, with it’s finicky and temperamental character is true to it’s South African roots.
To be able to make the best wine we can, we hand sort bunches, de-stem them, and then berry-sort on vibrating tables to remove all material other than grapes (MOG) like green berries, raisins and unhealthy grapes. This is a time consuming and labour intensive process, but the results are phenomenal.
You’ll just have to wait and see!
