First Stone Organic Red Blend
Spier First Stone is a single red blend of 60% merlot and 40% cabernet sauvignon, crafted according to the highest standards of quality expected from Cellar Master Frans Smit. It is named after the giant, ancient granite boulders dotting the banks of the Eerste River that flows through Spier farm. After 24 months of ageing, the wines are tasted and blended.
TASTING NOTE:
Notes of dark cherries, and an abundance of cassis and fennel with hints of allspice. The palate is rich, complex and balanced with a savoury, elegant finish. This wine will benefit from ageing.
SERVE WITH:
Beef entrecote with truffle mushroom and roasted vegetables.

15- to 17-year-old trellised vines growing on deep, structured, decomposed granite soils with a high percentage of clay that ensures good water retention and minimal supplementary irrigation. A vertical trellis system allows for optimal disease and pest management as required by the organic ethos. It also facilitates optimal sunlight and air penetration for the optimal phenolic development of the fruit.
WINEMAKING:
Grapes were hand-picked at optimal ripeness. After a meticulous selection to eliminate unwanted, shrivelled or underripe berries, the fruit was crushed to stainless steel tanks. A combination of natural and cultured yeast is used to ferment the grapes over a period of 18 days. Free-run wine was barrelled down for maturation in French oak barrels: 55% first fill with the rest second and third. After 24 months of ageing, the wines were tasted and blended. Orlando Filander, Spier's farm manager, has worked on the farm for 16 years, playing a key role in its attainment of organic certification in 2015. A trained viticulturist, he oversees all aspects of the farm’s wellbeing, including the rejuvenation of the soil and the replanting and rehabilitation of indigenous vegetation.
