HERITAGE SINGLE VINEYARD CABERNET SAUVIGNON

TERROIR / SOIL:
Deep, decomposed granite soils with clay subsoil. Cool, south western-facing slopes.
VINEYARD AND CLIMATE CONDITIONS:
Trellised vines aged 18 years yielded 7 tonnes per hectare. Selective foliage management was done during ripening, resulting in the development of thicker grape skins for more concentration.
WINEMAKING:
The grapes were hand harvested at optimal ripeness of phenols and taste. The berries were hand selected by size and colour density to craft a concentrated and finessed wine. Fermentation was done in temperature controlled stainless-steel tanks and continued for 21 days on the skins before being racked to 300-liter French oak barrels (60% new and 40% second fill). Malolactic fermentation and maturation were done in barrel for 14 months, resulting in a dense, fruit-laden Cabernet Sauvignon, representative of its terroir.

APPEARANCE: Deep ruby red
TASTING NOTE: This smooth, full-bodied wine has prominent aromas of black cherries, blackcurrant and cedar spice. The palate shows intense black berries and a smoky spiciness that surfaces from the depths of this intensely layered wine. The wine finishes with a lingering smooth, rounded tannin structure.
SERVE WITH: Grilled rib-eye steak with wild mushroom sauce.
