TERROIR / SOIL:
Soil types of weathered granite, with some deposits of Malmesbury shale
VINEYARD AND CLIMATE CONDITIONS:
Dryland, semi-trellised vines with an average age of 30 years yielded the grapes for this wine. The fruit was harvested from the end of February to the end of March at a yield of 6 to 8 tonnes per hectare. The climate differs from maritime (close the Atlantic Ocean) to Mediterranean (further inland).
WINEMAKING:
Grapes were hand-harvested early in the morning and pre-cooled prior to hand-sorting, destemming and crushing. Skin contact was limited to four hours and the free-run juice drained off to settle overnight before inoculation. Fermentation took place in 300L and 400L barrels. The wine matured for 10 months in French oak barrels (20% new and 80% second and third fill).
