ORIGIN: Coastal region
SOIL & TERROIR:
Stellenbosch's diverse terroir allows for pockets of decomposed Granite in which the trellised and bush vines grow. The age of the vines varies between the ages of 17 and 30 years old. The maritime influence from False Bay allows for the roots to forage deep into the earth to support the naturally low-yielding fruit.
WINEMAKING:
The grapes were hand-harvested early in the morning. Light pressing followed destemming and crushing. Skin contact was limited to four hours. The free-run juice drained off to settle overnight before inoculation. 30% of the fermentation occurred in 300L and 400L barrels, with the rest fermented in stainless steel tanks. The wine matured for 8 months before blending.
