Chef Os & Farmer Angus’ Farm-To-Table Feast
On Saturday 3 June 2017, we invite you to experience first-hand the true meaning of farm-to-table food, brought to you by Chef Os.
A guided tour led by Spier farmers Angus and Neil will reveal the inner-workings of the farm, showing how ingredients are grown and reared sustainably. Back at Spier’s historic Manor House, Chef Os will present an elegant three-course dinner made with seasonal produce available from Spier, and paired with Spier’s award-winning wines.
Chef Os trained in classical French cuisine at Silwood Kitchen, and subsequently spent time expanding his repertoire through his journeys as a culinary nomad. He has been on various expeditions in this time, working as a yacht chef in the Med, a private chef all over Europe and a food tour leader from Barbados to Bombay. Currently Chef Os is working as a private chef as well as hosting outdoor food experiences and other unique once-off culinary events.
The menu includes:
Biltong and Rubro iced tea on the tour
Trio of beef tartare with roast marrow and pickled veg / South African savory cheesecake with onion marmalade and pickled seasonal veg
Duo of spiced chicken thigh ballontine and French trimmed leg with root vegetable dauphinoise, seasonal greens and a citrus infused jus
Mini pavlovas with seasonal fruit and Spier lime curd
