One unique single vineyard in the Helderberg Mountain range of Stellenbosch.
TERROIR / SOIL:
Proximity to ocean: ±7 km
VINEYARD AND CLIMATE CONDITIONS:
Trellised, 13-year-old vines planted on southwest facing slopes of the Helderberg Mountain yielded the grapes for this wine. The cooling effect of the sea breezes in summer on both vineyards takes the edge off the heat, giving the berries a longer ripening period. The vineyards received supplementary drip irrigation and produced 6 tons per hectare.
Temperature: Winter: 9° - 16°C, Summer: 14° - 28°C
Annual Rainfall: ±800mm
Selected bunches were hand-harvested early in the morning in 10kg lug boxes and pre-cooled before hand-sorting, destemming and crushing. Skin contact was limited to 6 hours and the free-run juice drained off to settle overnight before inoculation with a selected yeast strain. The fermentation took place under controlled temperatures between 12° – 14°C. The wine matured for 6 months on the lees before bottling
