One special single vineyard of only 0.44 hectares from the Helderberg mountains in Stellenbosch.
TERROIR / SOIL:
VINEYARD AND CLIMATE CONDITIONS:
The grapes for this wine come from a young vineyard of only 11 years, planted on southwest facing slopes of the Helderberg Mountain. The cooling effect of sea breezes takes the edge off the summer heat, and gives the berries a longer ripening period.
Vineyards received supplementary drip irrigation and produced 6 tons per hectare.
Temperature: Winter: 9°-16°C, Summer 14°-28°C
Proximity to ocean: 5 -10km
Annual Rainfall: 800mm
Only the most perfect bunches were harvested by hand early in the morning in 10kg lug boxes. They were cooled prior to hand-sorting, destemming and crushing and left on the skins for 8 hours. The free run juice was drained off to settle overnight before inoculation with a selected yeast strain. The fermentation took place under controlled temperatures between 12° and 14 °C. The wine matured for 6 months on the lees before filtering and bottling.
