Memories of crushed cranberries, fresh black cherries and hints of spearmint entices the senses before tasting delightful crushed cherries, pomegranate and subtle oak spice. This is a concentrated full bodied wine with great presence and coats the senses for an extended period of time.
The grapes were picked in mid March when the morning temperatures have dropped. This allows for cool grapes that are sorted by hand, berry by berry. Only the small, black grapes are good enough for this wine. The grapes are then transferred to roller barrels for fermentation. Extraction is done during fermentation by rolling the barrels, resulting in super fine, dense tannin and great fruit preservation. After 25 days on the skins, the wine is transferred to 100% new Frenck oak barrels. The wine is matured for 30 months in barrel before bottling.
