TERROIR / SOIL:
Vineyards in the Helderberg area of Stellenbosch and Durbanville’s Tygerberg Hills. Oakleaf and Tukulu soils.

VINEYARD AND CLIMATE CONDITIONS:
Trellised vines planted between 13 and 17 years ago on south-facing slopes yielded the grapes for this wine. They received supplementary drip irrigation and produced 10 to 12 tons per hectare.
Temperature: winter – 9° - 16°C; summer – 14° - 26°C
Proximity to ocean: ±20 km
Annual rainfall: 800 – 1100 mm

WINEMAKING:
The grapes were harvested in the early morning from selected vineyard blocks at 21° – 23° Balling using a harvest machine. We protected the grapes and juice with a CO2 blanket to prevent any change in oxidation. In the cellar, the grapes were gently pressed. Only free-run juice was used; this was left to settle overnight. Fermentation took place in stainless steel tanks at a controlled temperature of ±12° C. The wine spent two months on the lees prior to bottling.

APPEARANCE:
A pale straw colour with a lime green rim.

TASTING NOTE:
The wine has rich aromas of green figs, grass and ripe tropical fruit. A lively palate offers prominent fresh fruit.

SERVE WITH:
Serve chilled with a fresh seafood salad or roast chicken.
