This beef patty burger is topped with a gorgonzola sauce and plum and pink peppercorn chutney, especially created to enhance the red fruit, berries and spicy aromas of the wine.
Now you can make this divine chutney at home!
Recipe: Plum and pink peppercorn chutney
Ingredients:
3 cups red wine vinegar
2 tsp toasted and crushed coriander
3 star aniseed
3 tbls crushed pink peppercorns
1 tsp cinnamon powder
2 tsp Maldon salt
200g red onion, thinly sliced
20g chopped garlic
20g chopped ginger
400g pitted dried prunes
1 green apple, peeled and grated
6 tbls brown sugar
1 cup water
Method:
• In a pot, add the vinegar, spices, onion, garlic and ginger
• Bring to the boil until onions are soft
• Add prunes, apple, sugar and water and bring to the boil again
• Reduce to low heat until mixture is soft, sticky chutney consistency
