WINEMAKER: Tania Kleintjes

ORIGIN:  Coastal Region

TERROIR / SOIL:

From terroir unfettered by artificial pesticides, fungicides and fertilisers.

The organically grown vineyards are nurtured in decomposed granite soils with a high clay percentage in Stellenbosch, Paarl and Groenekloof regions. The certified organically grown grapes are sourced from vines aged between 15 and 25. The average annual rainfall for these vineyards ranges between 450 mm and 500 mm.

WINEMAKING:

The grapes were hand-harvested in the morning and collected in 8 kg lug boxes. The grapes were then cooled in the cellar before hand-sorting and de-stemming took place. No skin contact was given, with a low-intervention approach used throughout the winemaking process. The juice was fermented in temperature-controlled stainless-steel tanks and allowed to mature for four months on its gross lees to enhance its structure before bottling.
