TERROIR / SOIL:
East-facing vineyards planted in deep Oakleaf and Clovelly soils on the Tygerberg Hills. Cooling breezes from the Atlantic Ocean 16km away makes this area perfect for white wine cultivars.
VINEYARD AND CLIMATE CONDITIONS:
Dryland, trellised vines with an average age of 15 years yielded the grapes for this wine. Moderate summers with low night temperatures and cold winters create a perfect micro-climate for Sauvignon Blanc grapes.
Grapes were harvested with a new technology harvest machine early in the morning while the ambient temperatures are still very low and the grapes cool. We harvested at optimum ripeness (between 21° and 23° Balling). Skin contact was allowed for 4 hours at 10°C. Only free-run juice drained by gravity was used for fermentation. The wine is fermented in stainless-steel tanks between 12° and 14°C. After fermentation, the wine matures on its lees for 3 months before racking and bottling.
This wine received Control Union Vegan Standard certification by the accredited certifying body Control Union.
