With only the very best selection of Chardonnay and Pinot Noir grapes hand-harvested from cooler coastal vineyards, this Cap Classique is infinitely light and refreshing. As an older 2013 vintage, ‘R.D’ stands for ‘Recently Disgorged’. This is because the bottle-fermented sparkling wine spent a remarkable 84 months on the lees, adding sought-after complexity and brioche flavours. The result is a crisp and beautifully balanced Cap Classique that is excellent on its own or served with fresh Atlantic oysters.

Rich biscotti aromas, stewed fruit notes, an elegant palate, and a red apple and apple core with a lemon-lime finish. Crisp and complex, with a fresh finish.

VITICULTURE:
Traditional Cap Classique varieties – Chardonnay and Pinot Noir – from three select vineyard blocks planted 20km from the ocean experienced ideal weather conditions during the 2013 harvest season. Moderate day temperatures and cooler nights than usual had a positive impact on the quality of the grapes that were hand-picked in the early morning in 10kg lug boxes between 18-19.5o Balling.
VINIFICATION:
Grapes were hand-sorted on a conveyor before whole bunches were delicately pressed. Only the free run juice was used in separate parcels of each of the varietals were fermented in stainless tanks, with 10% reserved for fermentation in 400L French oak barrels. Secondary fermentation and maturation lasted for 84 months on the lees in the bottle. After Riddling (turning of the bottles) the Cap Classique was disgorged and in line dosage (mixture of sugar & wine) was added.
