TASTING NOTES
Layered with fruit flavours of black cherries, plums, current and marzipan. Balanced broad palate of berries, oak infused spices and subtle tannins. Some cedar oak notes leads to a finish of refined tannins. A delightful fruit and spice infusion layered for ultimate discovery of the depths of character.
VINIFICATION
Grapes were hand harvested and pre-cooled prior to de-stemming and sorting. De-stemmed and hand-sorted to take out green, pink and raison berries. Fermentation took place in both open-tank oak fermenters and stainless steel tanks for up to 14 days. Malolactic fermentation and maturation took place in 300 litre French and American oak barrels for 14 months of which 60% was first fill and 40% second fill. Wines are made individually to address each varietal’s need before blending. Selective tasting from the barrels determines the composition of the eight varietals for balance between fruit, palate, oak extract and tannin.
