TASTING NOTE:
Brimming with beautifully balanced aromatics of grapefruit, mango with subtle notes of raw almonds shavings. The creamy palate offers fresh citrus, nectarine and well-integrated vanilla for a rounded finish.
SERVE WITH: Delicious on its own or served with pork chops, roast chicken or creamy mushroom pasta.
APPEARANCE: Pale yellow in colour.

ORIGIN:
The Spier True to Terroir Chardonnay is made from quality grapes sourced from selected vineyards within the Coastal regions of the Tygerberg Hills of the Western Cape.
TERROIR / SOIL:
The grapes were grown in Oakleaf soils along the South-west facing vineyards of the Tygerberg Hills, just outside Cape Town. Located 16km from the ocean, here the vines are dryland and semi-trellised with an average age of 16 years. The vineyards enjoy a moderate summer with low night temperatures and a cold winter, encouraging a longer hangtime and gradual ripening.
WINEMAKING:
The grapes were hand-harvested between 22.5° and 23.5°B. The cool grapes were destemmed at the cellar, slightly crushed and lightly pressed. Skin contact was allowed for 4 hours at 10°C. The free-run juice drained by gravity was used for fermentation, 60% of which fermented in stainless-steel tanks and 40% in older French oak barrels. Maturation occurred on the fine lees for 6 months prior to bottling to give extra body, elegance, flavour and freshness to the wine. The oak component was blended with the stainless-steel fermented wine prior to bottling.
