TRUE TO TERROIR CABERNET SAUVIGNON 2018
WINEMAKER: Johan Jordaan
ORIGIN: Coastal region (Cape Town and Stellenbosch)
TERROIR / SOIL: Decomposed granite and weathered shale.
VINEYARD AND CLIMATE CONDITIONS:
The vineyards are planted on a range of aspects, from flat to northeastern-facing slopes that moderate phenolic development and enhance fruit preservation. The rich, deep, decomposed granite soils have good water retention and medium fertility; this results in low, concentrated yields, which adds complexity and tannin structure.
Temperature: winter 8 - 19°C; summer 13 - 29°C
Annual rainfall: average of 450 mm
Proximity to ocean: 6 to 20 km
WINEMAKING:
The grapes were hand harvested, de-stemmed and individually sorted before inoculated fermentation in stainless-steel tanks. After 15 days, free-run wine was racked to barrels to continue malolactic fermentation in a combination of 80% French and 20% American oak barrels (mainly second fill; some third fill) and matured in the same vessels for 14 months. Barrel selection was done to blend the most harmonious expression of the cool coastal region.
