









Spier welcomes Erloom, a young Dutch culinary collective, for an eight week residency, the first time this Hilvarenbeek based group has worked outside the Netherlands. Founded by chef Gijs Bruurs and grown out of a summer restaurant on an organic farm, Erloom is built around fire, nature and the people gathered around the table.
Each weekend centres on a single farmer or producer. Two chefs, one Dutch and one South African, are paired to cook a shared menu around that farmer’s story, served at one long table. Eight young cooks, half from the Netherlands and half from South Africa, work alongside them. Wine is central throughout, with a different winemaker featured each week alongside Spier’s own.
Margot Janse, Dutch born and South African by choice, joins as culinary partner, drawing together the chefs, farmers and winemakers taking part. Proceeds go to local community initiatives chosen jointly by Erloom, Margot and Spier.

As part of the Woordfees program we are presenting a series our our sensorial tasting for you to enjoy. Set in the private Green Room of the Spier Manor, this intimate experience invites guests to taste their way through the Creative Block range blindfolded.

We’re standing at a threshold. The old models - of medicine as war against the body, of agriculture as war against the soil, of economics as extraction without relationship - are collapsing under their own weight. In their place, something new is emerging: a return to natural law, to the intelligence already encoded in biological systems, waiting to be remembered rather than invented.
